In 1993 he was Minister of Agriculture and Fisheries of the Junta de Andalucía and the following year, Minister of the Presidency of the Junta de Andalucía and member of the Committee of the Regions of the European Union. During this stage he is also Deputy for Cordoba to the Parliament of Andalusia. In 1996 he was senator to Cortes by autonomic designation, but at the end of that same year he returned to Brussels as Cabinet director of the vice-president of the European Commission Manuel Marín where he was responsible for relations with the Mediterranean, Latin America and Asia.
From 1999 to 2004 he was appointed director of the Cabinet of the Commissioner of the European Commission Pedro Solbes, responsible for economic and monetary affairs. That year he was appointed Ambassador of Spain in Morocco. From October 1, 2010 and until December 31, 2011, he was the permanent representative ambassador to the European Union.
On May 7, 2012, he returned to Spain to be appointed Minister of Agriculture, Fisheries and the Environment of the Junta de Andalucía. On March 1, 2014 he joined the European Economic and Social Committee as general secretary.
On June 6, 2018, he was appointed as Minister of Agriculture, Fisheries and Food in the new socialist government of Pedro Sánchez.
Regional deputy since 2015, has been a spokesperson for the Committee on Employment, Enterprise and Commerce in the Andalusian Parliament, as well as a member of the Commissions for Development and Environment and Territorial Planning. Speaker in the modification of the Law of Urban Planning of Andalusia (LOUA), was also commissioned in the parliamentary committee of research of training courses.
The Minister of Agriculture, Fisheries and Rural Development has also been Deputy Mayor of the Municipality of Turre in the periods 1999-2003 and 2007-2011, and councilor in the opposition between 2011 and 2015. He has practiced law with his own office until 2015.
In 2004 she became deputy of the Parliament of Andalusia for the province of Córdoba. In the parliament he chaired the Commission on Disability and acted as rapporteur of the PSOE in the Law on the Promotion and Defense of Competition of Andalucía. Later he served as vice president of the Interior Commission and was spokesman for the Socialist Group in the Tourism Commission, Commerce and Sports
On May 20, 2008, she submitted her resignation to the act of deputy of the Parliament of Andalusia, obtained in the regional elections for the circumscription of Córdoba, date in which she was appointed Delegate of the Government of the Junta de Andalucía in the province of Córdoba.
On January 20, 2015, she left her position as a delegate of the Board to attend the municipal elections in Córdoba for the PSOE On June 13, 2015 she was elected mayor of the city of Córdoba.

Previously, Olga San Jacinto was Director of Business and International Strategic Alliances of Google, and previously she was Director of the Finance, Local and Entertainment Division of Google Spain, being the oldest member of the top management team of Google Spain. She has a great experience in the financial sector, Olga has worked for more than 14 years in Spain and the United States, in entities such as "Bank of New York" or "Abbey National Bank".
He belongs to the Council of the NGO Children's Charity focused on the development of disadvantaged areas through education and is Patron of the Jerusalem Foundation, whose objective is to promote the universality of the cultures of the city of Jerusalem and its economic and social development. Olga San Jacinto has an important teaching experience at the Complutense University of Madrid, ESIC, the Polytechnic University of Madrid and the IESE. She is also a mentor at the Instituto de Empresa.
Due to her important career, she has been selected to be a member of the Women and Leadership Forum organized by the European Union and the Community of Madrid. He is currently part of the independent advisory board of Evo Bank, which belongs to the North American fund Apollo Management Internacional LLP, which in this way strengthens its Board of Directors and its executive body.
Agronomist from the Polytechnic University of Madrid and Master in European Communities from the same University, in 2014 and 2015 he was a member of the Cooperative Credit Bank, member of its Executive Committee and Chairman of the Audit Committee.
From 2000 to 2015 he was general director of Cooperativas Agro-alimentarias of Spain, vice president of the European Confederation of Agricultural Cooperatives (COCEGA), representative body of the European cooperative sector, and administrator of CCAE Quality. Previously, he had been director of the Brussels office of the Confederation of Agricultural Cooperatives of Spain, where he advised Spanish MEPs on the European Union's Agriculture Committee and participated in numerous auditions on such important issues as the CAP and the different CMOs .
In addition to having participated in many conferences, seminars and conferences both national and international, he has collaborated in different books and studies on the agri-food and cooperative sector, among which the volume "The role of agri-food cooperatives in the world economy" of the collection stands out of Estudios Mediterráneo Económico published by Cajamar Caja Rural. He also teaches strategic planning in the Master of Management of Agri-Food Companies of the LAFER
